Sometimes it is just too hot to cook, or you're just too tired... or lazy.

Here a few quick and easy recipes that also taste great:

MomsRetro Lazy Egg Salad Sandwich

This 'salad' uses all the same ingredients as normal egg salad, it's just a lot easier, and it's perfect for just one person.

Ingredients

2 slices of bread, or hot dog bun, or cut open roll
mayonaise
mustard
wurchester sauce
paprika (optional)
salt and pepper to taste
sliced hard boiled egg

Spread mayonaise on both slices of bread.  If you like a lot of mayo, use a lot, just use an equal ammount on each slice.

On ONE of the slices, spread on a small amount of mustard.  About one spoonfull or less, mustard is the spicy part.  Mix it around on top of the mayo.

On the 'mustard' slice, add 2 to 3 drops of wurchester sauce.  This is the secret ingredient.

Layer hard boiled egg slices on bread.  Top with salt and pepper to taste and put sandwich together.  Enjoy!


Lazy Pasta Salad

Ingredients

Cooked pasta
Salad dressing of your choice

This is a two step recipe if you have salad dressing.  Just cook your pasta and drain.  Use bow tie pasta, macaroni or a special salad pasta.  You will adjust your dressing amount acordingly.  Good dressings to try with this recipe are Italian, ranch or green goddess.

Pour salad dressing onto pasta and chill.  Pasta salad can be chilled overnight or for a few hours.  Make sure your container is sealed, you can use a heavy duty freezer bag in a pinch.

Start with a small amount, maybe 1/2 cup of dressing to start.  Mix in and taste.  You can always add more dressing but it's hard to take out.  If you add too much, some will soak into the pasta in a few hours.

Quick Additions:
Jazz up the basic recipe with any of the following:  chopped olives, artichoke hearts (undrained if you like the taste), chopped avacado, shredded cheese, chopped ham, bacon bits (great with creamy dressings), celery or chopped carrots.
