Sometimes it is just too hot to cook, or you’re just too busy, too tired… or lazy.  Here a few quick and easy recipes that are easy for beginning cooks to make but also taste great:

Egg Salad Sandwich

Two-Step Pasta Salad

This ‘salad’ uses all the same ingredients as normal egg salad, it’s just a lot easier because you make the salad in your sandwich, so it’s perfect for just one person.

Ingredients

2 Slices of Bread, or Hot Dog Bun, or Cut-Open Roll or…
Mayonnaise
Mustard
Worcestershire Sauce
Paprika (optional)
Salt and Pepper to Taste
A Sliced Hard-Boiled Egg

Spread mayonnaise on both slices of bread.  If you like a lot of mayo, use a lot, just use an equal amount on each slice of bread.

On ONE of the bread slices, spread on a small amount of mustard.  You want the mustard to equal slightly half, or less, than the amount of mayo you used.  Mustard is the spicy part.  Mix it around on top of one of the one bread slice with mayo.

On the ‘mustard & mayo’ slice, add 2 to 3 drops of Worcestershire Sauce.  This is the secret ingredient.  Mix the Worcestershire in with the mustard and mayo on this slice of bread.

Layer hard boiled egg slices on the mustard & mayo bread slice.  Top with salt and pepper to taste.  Put your sandwich together.  Enjoy!

Note:  This is a great sandwich recipe to make and refrigerate for later.  The longer your ingredients have to blend together, the better your sandwich.  Just wrap it up and keep your snack chilled in the fridge for a few hours.

Quick and Easy Pasta Salad

Ingredients
Cooked pasta
Salad dressing of your choice

This is a two step recipe if you have salad dressing.  Just cook your pasta and drain.  Use bow tie pasta, macaroni or a special salad pasta.  You will adjust your dressing amount accordingly.

Good dressings to try with this recipe are Italian, ranch or green goddess.

Pour salad dressing onto pasta and chill.  Pasta salad can be chilled overnight or for a few hours.  Make sure your container is sealed, you can use a heavy duty freezer bag in a pinch.

Start with a small amount, maybe 1/2 cup of dressing to start.  Mix in and taste.  You can always add more dressing but it’s hard to take out.  If you add too much, some will soak into the pasta in a few hours.

Quick Egg or Pasta Salad Additions:

Jazz up the basic recipe with any of the following easy additions:

chopped olives,
artichoke hearts (undrained if you like the taste),
chopped avocado,
shredded cheese,
chopped ham,
bacon bits (great with creamy dressings),
celery,
chopped carrots.
